SOUPS
Ginger Chicken Soup
Ingredients
300 gram(s) boneless chicken (kai) cubes
1 cup(s) mushrooms (hed) sliced
2 cups(s) coconut milk
2 tablespoon(s) shredded ginger (khing)
2 teaspoon(s) lemon grass (takhrai) chopped
2 tablespoon(s) young galangal (kha on) sliced
4 tablespoons galangal (kha) sliced
4 fresh red chillies (prik khi nu daeng) chopped
2 tablespoon(s) fish sauce (nam pla)
4 tablespoons lemon (manao)juice
1 teaspoon(s) chilli oil
1 tablespoon(s) coriander leaves (pak chi)
salt to taste
Preparation
Pour the coconut milk in a pan and heat for about 2 minute(s).
Add chicken, mushrooms, ginger, lemon grass, galangal, young galangal, red chillies, lemon juice and fish sauce. Mix well. Boil on medium level for about 6 minutes and put off the flame.
Creamy chicken soup
Ingredients
100 grams shredded boneless chicken pieces
500 ml chicken stock
1 tablespoon(s) finely chopped garlic
1 teaspoon(s) cumin seeds
1 tablespoon(s) white flour
2 teaspoon(s) butter
1 tablespoon(s) oil
salt and white pepper to taste
1 tablespoon(s) fresh cream
Preparation
Heat the butter in a pan and stir-fry the shredded chicken pieces till tender. Remove from the pan and keep aside. In the same pan heat the oil and splutter the cumin seeds. Add the chopped garlic and saute for a few seconds. Add the white flour and stir-fry for about 1 minute(s).
Add the chicken pieces, chicken stock, white pepper powder and salt. Cook on medium level while stirring for about 4 minutes.
Stir in the fresh cream just before serving.
Drumstick Carrot Soup
Ingredients
Drumstick 3-4
Carrot 1
Sambar ulli 50gms
Turmeric powder 1/2 tsp
Mustard 1 tsp
Curry leaves 2-3 stems
Oil 1 tsp
Bread slice 2-3
Butter 2 tsp
Salt
Preparation
Scrap the outer surface of the drumstick and carrot and wash it well. Pressure cook the same with turmeric , sambar ulli and salt. After about 2 whistles remove it from the fire and once it simmers mash the ingredients well and remove the sticks of the drumstick that gathers seperately. Toast the bread well (almost brown and little hard). Cut them into small squares and keep them aside. Take a pan and pour a teaspoon of oil and burst the mustard, add curry leaves and finally add the bread squares and butter while serving it hot.
Hot and Sour Chicken Soup
Ingredients
Chicken(very small pieces)-100gms
Sliced Carrot -1
Chilly -4ns
Pepper-1tbs
Corn flour -1 tsp
Egg- 1 or 2
Coriander leaves- 12 bunch
Salt-to taste
Soya sauce-1tbs
Preparation
Cook the chicken in a vessel by adding sliced chillies , salt and water. When it cooked add thesliced carrots and little coriander leaves. Beat the eggs and pour it also into the vessel. Mix it slowly. After cooking it well pour the corn flour mixed in water. Allow the soup to be thick. After that add some soya sauce and allow to boil. Spread the remaining leavesand some peepper if needed. Remove from the stove.
